The Perfect Summer (or anytime!) Topping!
Let’s be honest, everything always tastes better in grandma’s kitchen! This is a recipe I adapted off of one of my FAVORITE summer dishes that my Grandma Chris makes!
“Bruschette,” according to TheInternationalKitchen.com translates to “slices of toast with stuff on top”. It dates back to the Ancient Romans and was a dish to feed the poor on stale, old bread. Today, it’s a culinary masterpiece and super versatile!
4 roma tomatoes, chopped
2 cloves or garlic, minced
8-10 fresh leaves of basil, chiffonade
1/4 cup extra virgin olive oil
2 TBS balsamic
1 tsp Worcestershire
1/2 tsp dried oregano
Pinch of salt
Mix all the ingredients in a bowl and rest at room temperature for at least 30 minutes. Enjoy with/over the following!
- Over toasted French bread points
- Grilled salmon or chicken breast
- Topped over burrata with toast points
- Over romaine or grilled mixed vegetables
